I am certainly not an expert but your description does suggest your well pump could be sitting on or in sand or other loose sediment that is being drawn to the intake gauze when the water flow is high, restricting the flow and therefore cutting the pressure.

Switching off for a few seconds would allow the sediment or whatever it is to settle back and restore performance until high flow is needed again.

Scale down the problem to the size of a vehicle fuel system and the most common cause of the same symptoms apart from water in the fuel tank is something like a piece of rag or especially a plastic bag in the tank.
