First of all they have to be stainless , with out taking the hub out I guess you could bring the slicer to the hardware store and try serveral screws till you get the correct ones , I don't recall the size , maybe someone else on here will have the size for you

Your grinding stone stud is more than likely frozen try and lossen it up with a little penetrating oil take the sharpener off and work both stone back and forth untill they are both spinnig freely and remember do not apply either sharpening wheel on the knife for more than 5 seconds at a time you can burn the wheel and then it will never get sharp

dose it leave a tail on the meat ?

Hi if he has to remove it , never heard of someone removing a blade to clean it , he needs to use a inpact screw driver with a hamer, I see so many louse fingers not knowing what they are doing

This isn't recommended, meat tends to get in a lot of the nooks and crannies in a slicer machine. It's best to first unplug the machine, then take it a part in order to properly clean it. If your not sure how to take the machine apart, consult the user's manual for further understand how to do it. Once taken apart, some sort of stainless steal cleaner followed by a sanitizing soap should be used to clean it. Sanitizer is very important especially when dealing with meat products. Once a sanitizer is applied it is recommend that you let the slicer air dry for 4-6 hours before using it again to ensure the sanitizer has fully dissipated.

Vegtable oil is safest!!!

It s NOT uncommon to have new parts be slightly different than old version of the part and require slightly different hookup. The part number you have included does NOT appear to be a rocker switch.
I do see a rocker switch part number "823-00039-1 SWITCH, ROCKER" that may be what you need if it is a rocker type. The part number you gave is a "toggle" type with a "bat handle".
I suspect the problem is they gave you the wrong part.
