Sounds more like a lose connection in a wiring harness . Just replacing parts isn't the way to fix it . Taking your vehicle to a qualified repair shop that has a professional scan tool an checking for DTC's - diagnostic trouble codes , an viewing data inputs to the different control modules is the way . You probably don't know about serial data networks an how they work ? All the gauge info comes from the engine computer over data bus. When you see -------- this the info got lost or the ECM/PCM can't send the info.

There are two limit switches on an AC system, one is high and the other is low. You are assuming it is the low pressure one. It could be the other one. The only way to know for sure is to use a manifold pressure gauge set. With that in mind, it could be a very small leak or obstruction in the orifice. A back yard test method that I dont recommend is to bypass the low pressure limit / cutoff switch and see if the compressor stops cycling. The downside to this is can be damage to the system if it is really low on refrigerant or it is a high pressure issue and can explode.
