The scanner bar, the part that moves, gets stuck at the top and renders the entire unit unusable. We have figured out how to take it apart and get in to it, but now we can't see how to fix it

It is dust built up inside on the fan wheels. You wouldn't believe it but it is just dust. If you are mechanically and electrically inclined, take apart the housing and blow out the entire unit with compressed air especially all the vents and blower fans (my Optoma has 3). It'll work like new again. I was completely amazed.
I had a similar problem, the scanner bar was stuck to the far left side. Here's how I fixed it:
1)Unplug the printer, disconnect any cables/phone lines to it.
2)Lift up the entire scanner bed housing(you will see the printer ink cartridges).
3)Locate the access patch (approx 1 cm x 1 cm square) along the left edge of the scanner bed housing(this is the side that closes in, next to the keypad buttons).
4)Using a small knife blade, peel off the patch from the corners and edges(it's sticky. Save it, you can stick it back over the hole when you're done).
5)Stick a pen through the access hole, and push the scanner bar to the right, approximately 2-3 inches.
6)Now, close the scanner housing, plug in the printer, and power it on.
It should reset and re-calibrate the scanner bar. If it doesn't, repeat steps 5) and 6) a couple times, until the printer correctly performs calibration. Then, you can put the sticky patch back over the hole, and you're ready to go. Hope this helps!
I personally wouldn't try to do that, you run the risk of rendering the scanner nonfunctional, and also probably would void the warranty if it's still applicable. You may try calling Lexmark support at 1-800-332-4120 and tell them the scan bar is really noisy, and that's making the scans blurry. Depending on whether you're still under warranty and who you get (no joke), you may get a free replacement, since this sounds like a manufacturing defect.
If you can't get it replaced because it's out of warranty and decide to buy new, Lexmark's new business products that have just been released have a 5 year warranty, which is probably best in class. Check them out here.
Sorry I didn't respond to your post sooner, you've probably fixed this by now - I only registered here recently.
You will need a torx driver and or phillips to take it apart. Just common sense and patience will get that accomplished. What you want to do then is find the cables that run from the scanner to the circuit boards, disconnect them and reconnect them. Ribbon cables need to be gently removed and be sure when replacing them you don't get any folds in them.
If the that doesn't work, then most likely the board or scan motor have failed. You may also want to look in the scanner and see if the home position sensor, which would be a U shaped sensor has popped out. The clicking is from the scan head trying to find the home ( start) position sensor and not finding it. When it works correctly it drives back until a little flag passes between the light and the photo sensor within that home sensor. Once the light is broken the scan motor shuts off and positions the lamp properly.
hi all;
i fixed it by taking the thing apart, pushing the scanner head (the block that is stuck-- that normally moves) back to the starting position. Make sure its snug at the end, a little bit off and you'll be putting it have to take it apart and back together a second time. There's a mirco swtich in there somewhere, and you need to make sure its pressed...
reconstruct, and hey presto, a working scanner!
this also worked for my epson 1250 that got stuck once.

I couldn't find anything specific to the 3210 online.
Long shot, but this link is very detailed about another (very different) HP model that may just give you some ideas.
Usually on this type of hp unit, once you have the front two screws out the top cover wil just hinge towards the rear.
Could you post back some close up photos, hopefully we can give you some more help
