This question has too many variables to answer completely. How many lines? How many calls? What's your budget? Do the other people know you're recording and is it legal in your area?
About $250 gets you a 2-line recorder that uses your USB port and includes all software. About $55 gets you a single line interface that uses the MIC or LINE input of a sound card, and my favorite software Total Recorder will record all the sounds you hear.
A search engine will find you "USB telephone recorders" where you can find surveilance and recording devices for a small or large budget. One even claums to record remotely via internet!
If you are using a Symbian OS based phone (such as the Nokia 6120 Classic or many others, you could try using software such as Total Recall to record all your mobile phone conversations. Just be sure to set the recording quality to 'low' or both parties may hear beeps wile recording.
