My colour text comes out with a shadow (in a different colour) like something is out of line. Black text prints crisp and clean.

yes, it is something of line. Color text is printed by three cartridges overlapping on the page. Most printer have a setting called Calibrate. You can sometimes do it in Windows, too.
Start button--> Control panel-->devices and printers--> (right click the name of the printer--> properties--> the last tab often is calibrate.

Wont print in full black, does print in grey or any other colour.

Assuming you are using MS Excel, try going into page setup, sheet, and check the setting for 'print black & white'. If it is checked, then try unchecking it.

Copy the text into the NOTEPAD application, to remove all text-formatting & text-colouring, e.g., "white" text over a "black" background will become "black" text over a "plain" background.

I have a Canon MP610 printer. The Test page prints ok.The copy fuction is perfect co;our and black and white. When printing from a file saved on computer the text has a sepia tone not black and white....

just chk the properties or the colour cobinations if you choose text for printing out than it will only print text and if it is too dark red that means it is connected with some wrong colour wire

HP D7360 prints in magenta instead of black. Both cartridges are

Check your other colours. Anything other than a True Type Font is printed in colour shaded with black, so it sounds like you have a problem with yellow and cyan. Either the ink cartridges are out or the print heads have a blockage.
If the cartridges are not empty or v low, try sitting the print head over a folded paper kitchen towel damped with hot water for 10 minutes. Remove it and try your diagnostic again.

Why is there 2 black ink cartridges in my Canon MP600 printer

On some printers, probably including yours, the black ink will be taken from the reserves in your colour cartridge unless you specifically tell it to do a black and white print on each document, regardless of whether it's printing black exclusively. I wouldn't worry, the black ink in it's own cartridge can also be used for colour photos etc with no detrimental effects.

Printer prints in color but has gaps

Have you tried a new colour cartridge? This is a classic sign that the cartridge may be low on ink. When printing text, assuming you are printing black, it is likely that the black cart is doing most of the work so the gaps are insignificant. You could try printing text in several different colours. If the colour cartridge is low, you'll find that some colours may be ok but others may have gaps.

Best to try a new cart if you have one.
