We need to replace the power shaft, sleeve shaft part 8211849 on a Kitchen Aid 12 cup Food Processor Model KFPW760. How do we remove the current, old broken, power shaft?

This sounds like an issue relating with the assembly of the machine. The motor is definitely getting power if the indicator is lit. However, Kitchenaid food processors are designed (as a safety feature) to remain unengaged if the unit is not assembled in such a way. Here is the proper assembly:

Please disassemble the unit. This means: removing the blade, removing the work bowl, the work bowl cover, and unplugging the unit.

Starting with the work bowl: place the handle at the 9 o'clock position, which is out to the left. Rotate downward to the 6 o'clock position until it locks in, centered over the button panel.

Repeat the process with the work bowl lid.

Depending on which food processor you have, you may need the feed tube pusher depressed at least half way down the feed tube.

Plug in the unit. The blade does not have be installed for unit it to work at this point, assuming everything is assembled properly and the motor is functioning. The motor should now be working.

Dough is normally water soluble. Try soaking it in water for a several days up to a week. Then try prying it loose.

The bowl of my 14 c food processor will not release from the base - the cutting blade is in place

You will probably need to force the blade off the shaft somehow. If you over work them the blade can partly turn and lock onto the plastic shaft sleeve. A Kitchen Aid Authorised repairer will have figured out a way to remove it by now because it's been happening for years. Expect to replace the blade or the sleeve or both, once it's happened it's easier to happen a second time unless you replace parts.

How can I get kitchen aid blade out that is stuck

The blade will be stuck on the shaft and both will be damaged and require replacement. With that knowledge you now understand that drilling a hole sideways through the blade cap isn't wrecking anything you are going to use again. You can then get something into the hole for leverage. Here in NZ blades are under $20 and motor shaft sleeve is about $5. If you don't replace the parts it will happen again.

The shaft sleeve (the one on the motor shaft) is likely damaged. The correct solution is a new shaft sleeve and chopping blade. If you do not replace them both together the one you do not replace will damage the other one again.

The stem is stuck on kitchenaid kfpw760

The motor shaft sleeve and spindle will need to be replaced, once this jamming has happened it becomes ongoing if you do not replace those inexpensive parts. You need to wrap some webbing tightly around the spindle attach the other end to something very solid (like a fence post) and then accelerate the motor part rapidly away from the post. Hold onto the motor very firmly or it will land on the ground.The webbing tightens instantly when it runs out of slack and the spindle will come off. Then you need to remove the motor shaft sleeve in a similar manner, I drill a hole in the end and use a shackle and chain attached to the post for that one. I use the leg of my workshop bench, most folks will not have a solid heavy bench like mine. If that sounds too hard just take it to your local K/A service agent, they will have done it many times.
