Please confirm if this quirk you mention has always been with the dishwasher or has it appeared after you replaced the controller on the upper drawer.
I am assuming this is happening with both drawers and therefore, is unlikely linked to the controller replacement. Although I am curious why you needed to replace the controller which I believe is very reliable in these double drawer models.
Coming back to the drying fan, the manual is very clear that in spite of how much the remaining time on the drying fan operation is, it will turn off once you open the drawer. Is the behaviour any different when you enable the Auto power setting?
By the way I believe the dishwasher is already on enhanced dry mode unless the ECO button is selected. See bottom of page 7 in user manual.
Thanks for the clarifications.
I am getting the impression that by having auto power enabled you are able to get the top drawer drying fan to work as mentioned in the manual.
I think you should be able to reset the controller to a default state by initiating a diagnostic reset. But you have to be careful not to go too far with this as you may inadvertently operate a component which could get damaged.
Have the drawer in Power Off state (i.e, LCD display is blank).
Keep the drawer closed and press Keylock and Start/ Pause together for about 4 secs. (Press Keylock first).
The LCD panel should light up. Press Power button - the LCD will show HO in red background. Press Power again to turn off the display. This completes the reset cycle.
Verify any difference in the behaviour of the gremlins. Good Luck.

i think you have to press the key/ lock button until the symbol disappears. You will find the exact button for your model in your owners manual.

Honestly, I dont know if its always done this. I only started paying close attention after replacing this one controller. The controller in the bottom drawer needed to be replaced as it had suffered a short at the connection to the detergent dispenser - resulting in an F9 fault, and both drawers being disabled - flashing constantly and running the motors. I moved the good controller from the top drawer down to the bottom drawer as the bottom drawer will work if the top controller is removed, but neither will work if the bottom drawer has no controller. So while I waited for the new controller I was able to continue washing dishes in the bottom drawer.
In both drawers the fan stays on, after the cycle is finished, even if the drawer is opened. Also, both will display the clean dishes icon, even though this option has not been enabled. It makes no difference even when I enable, then disable it. I did run both drawers last night, and monitored the fan activity after the cycle finished. In the bottom drawer it ran for an additional 1.5 hours - allowing me to open the drawer, but re-starting the fan for 1.5 hours after the end of cycle. The top drawer did actually stop the fan when I opened the drawer (on this one I had enabled the auto power to see if it made any difference) and it did not re-start when I closed the drawer. Just seems like a bit of a gremlin, but I'm not sure what would make this happen, or if theres a way to re-set the 2 controllers.
