First off what type of input are you using going from the ps3 to the tv. If your using HDMI try changing the different video settings. Black ops actually has a lot of problems right now on ps3. So I wouldn't use that as the basis of what is working or not, I would try other games to see if it's working. Adjust the video settings on the ps3 and see if that helps. If that doesn't try using component cables and see what that does for you.

Why do I have no color when playing a PS2 Game? I have an Insignia LED-LCD HDTV 1080P 32" TV. I have adjusted the color settings but doesn't make a difference.

I would suggest replacing the AV cables that came with the PS2. The cables you have probably just old and just don't transmit color signals anymore.

You can get replacements from the internet or if you need them today, take a trip to your local Best Buy.

Generally speaking, your TV will display the signal it receives. DVD player output, for example, is 480p, but an upconvert DVD player can output the signal at 720p or 1080p. You should adjust your components (e.g. cable/satellite box, DVD/Blu-ray players, etc.) to the desired compatible output.

you have lost your chroma (color) circuit the sepia you are seeing is just the black & white picture black and, white is adjustable from red to blue to green tint so; your sepia is an overloaded red circuit i could fix this but, i'm here and, you're there so take it to a serviceman it should not cost much more than $100

Black and white format on 26" insignia hdtv (720p)

Go to Best Buy and see if they have your same Model on display and change the aspect ratio and see how it is. If it's normal there then to me it sounds like a software up-grade might be in order. It might just have a software glitch.

Insignia LCD tv 32".....

It's either the VGA cable you are using has a bad pin or the RGB/Color Scheme is set wrong. So try another VGA cable or try the LCDTV on another PC.
