If the self defrosting circuit is not working properly the freezer will ice up and internal temps will go up and thaw food. U indicate that it refreezes so whst could be the problem is the timer that controls the frequency and timing of the defrost cycle.

Try replacing defrost thermostat. It may be stuck in open position allowing heater to run for full length of defrost cycle.

Yes, you can refreeze it but it will freezer burn and maybe a bit more tough and have less flavor....you will just have to cook it more throughly...

The would be a problem with the defrost sticking and staying on too long...change the defrost timer/control board out....
the defrost cycle is making the freezer warm and then it goes off and the freezer refreezes...

most times it fails the other way and does not work at all but sometimes this happens...

I am no pro on these but it sounds like your defrost heating coils are coming on to often. You may want to check them. Aslo just for good measure>>>
Is your circulating fan working?
Sometimes they stick and need a shot of WD 40 and then work
it back and forth a little until it wants to take off again. Keep me informed

I was going to suggest that maybe it is a self defrost issue not shutting off when it should but sine you mentioned this knob, it suggests a thermostat out of calibration - I can rule out circuit problems since you can manually turn on compressor by turning the knob to a cooler position - you will need to have it serviced and change the thermostat which is not cycling whne it's supposed to.

ALSO - do not refreeze foods in your freezer that have thawed ! Throw them away !!! Normal freezer temps should not be warmer than 10F, the normal temps are 0F, and optimal recommended temp -10F (for hard ice cream) and to allow better recovery in case of power failures.

Refrigerator section no warmer tan 40F.....optimal recommended 34F.

Your defrost system may be out on this unit.
