Use just like a regular oven. Convection just blows the hot air around, so cooking can be faster. Search on google the differences between convection and baking.
I would guess either the circuitry for part of the keypad is defective or prehaps more likely the unit has developed amnesia because either the supply to the programmed memory chip is broken or the chip has failed.
It really amounts to the same thing as almost all those components will be on a single board and the repair guy is unlikely to worry about what is wrong but will simply replace the board.
The question is how much is the luxury of presets worth to you and will a repair be significantly less than the cost of replacement?
You do not give the make and model, but pizza stones are a generic sort of product, so you can just get one the same size as the turntable. Be aware it will not crisp or brown the pizza.

I would check the cooking instructions on the side of the pizzas packaging. If microwave cooking is not listed I would not recommend cooking it in a microwave as this could make the food unsafe to eat.
I would check the cooking instructions on the outside of the pizza packaging. If microwave cooking is not a suggest method I would not try to cook it in a microwave.
you may find the old unit was lower watts so took longer & cooked/heated better all the way through. a way to fix this is lower temp settings or pause and stir the food to help heat it up more even.
There are about three things you might consider. First, you can sprinkle corn meal lightly on the stone and this will help prevent your pizza dough from sticking. If you're already doing this, you might try spraying with a pan coating before you sprinkle the corn meal on the stone. Additionally, most of these stones require "seasoning" which is done by rubbing the stone lightly with vegetable oil and placing into the oven at about 300 degrees. Let it heat until the oil starts to smoke. Turn off the oven and let the stone remain in there until it cools. DO NOT WASH IN SOAP AND WATER.Just use a damp cloth to clean. I hope one of these suggestions help. If they do, please come back to Fixya and rate my advice.
