The oven has a flame detection installed that makes sure the gas turns off if the flame goes out. There are two component that do this. One is the flame detector and the other is the control device that turns the gas off,. Either one of these cold be faulty. The cheapest way is probably to replace the detector in the oven and if that does not work, replace the gas control device.

I'll give this a go! With a cooker like this, you depress and then turn the control knob, press the ignition button and continue to depress the control knob for a few seconds. This is because a device called a thermocouple is heated by the flame and you have to continue to depress the control knob so that sufficient gas flows to heat up the thermocouple. If the thermocouple does not get hot or stay hot then the gas valve is automatically closed - stopping the gas. The thermocouple is a 'flame failure' safety device. If the gas gets cut off then the flame goes out and the thermocouple goes cold switching off the gas valve automatically. However, you are having to try and manually keep the gas going for a good five minutes. I would think that there is either a problem with the thermocouple or the gas control valve! The knob won't have any effect on the flame size. The knob controls temperature. If you're referring to the pilot light staying on and then the main flame not going on...that's another problem. If the main flame will not go on, the assembly that controls the main flame is likely defective. If the unit has a thermocouple, you might change it out first. Sometimes, that's all that is needed and they're cheap.

Generally, reduce both the temperature and cook time 20% when using convection. 350 F becomes 300 or so, for instance. One hour becomes 45-50 minutes.

It sounds like the repair man was correct. The only variable is the valve, if the rest of the burners are fine then it will be the valve
