Hi, I takes lots of practice to use a charcoal smoker, but don't let that stop you! I go on professional competitions and started out by checking the "Virtual Bullet " website. This site is for the Weber Smokey Mountain cooker but you can get ideas from there. Hank
It should explain the process. I use a smoker a lot so my tips are, keep the temps as close to 225 as possible, reload your charcoal as soon as the temps start falling, don't peak, and patience will make for really good cooks.
I bought a replacement charcoal bowl for a charbroil h20 smoker for $12 on their website. It fits the same but lacks the air holes (I made my own). For the rack, I got some wire cutters and cut my own out of an old steel refrigerator rack. It works.
