Your system is in valet. To take the system out of valet with remote: open any door, press lock, unlock, lock. Now check the LED; it should be off. Close the door and arm the system to check.
OR
Turn the key on then off. Within ten seconds press and release the valet switch. The LED should be off now. Close the door and arm the system. The alarm should chirp to confirm that it is armed.

2007 GMC Sierra 1500 with Viper alarm 7146V. Why does the blue light stay on solid and why does it keep unlocking the doors by itself?

After Market alarms are always full of issues especially when the batteries are disconnected of the car batteries are disconnected.

Find a Viper Alarms installer and take it in for reprogramming with their pro grade scan tool computer.

I think I messed up the remote programing.. When I press to lock the doors they do lock but the horn doesn't honk anymore.. The blue light on the dash does not light up either.. I can still remote...

If the led is solid blue when the key is out of the ignition that means your in valet mode. Which would disable the alarm, but not the starter.
Simply turn key to IGN position then back to OFF.Push the valet button which is on the antenna next to the led and the led should turn off.Close door on vehicle and lock vehicle.Siren should now chirp.
Cheers!!

Alarm Light constantly lit

You are in valet mode. It means the vehicle will lock/unlock but not arm the security system.

Open the door then hit lock then unlock and lock. Led will now turn off and work as normal.

Disable viper alarm

Yes the best way is disarm the alarm and put in a Valet Mode
To activate the Valet Mode do the following:

There is a push button or toggle switch to disable the alarm (to engage the valet mode). Without knowing where this
switch is you won't be able to disconnect the alarm.

1. Put the key in the ignition and turn it to the "on" position.
2. Flip the toggle or hold the push button for at least 5 seconds.
3. The LED. light will stay solid on.
4. Turn the ignition off
5. Release the push button. If you have a toggle leave it alone in step 2

Battery went dead, clifford alarm locked the engine

Assuming that all is well with the vehicle's electrical system (fuses, etc...), the following should work, as Viper/Clifford uses the "fail safe" method of starter disable, and it only works to lock out the starter when the alarm is functioning properly and in the armed state.

That system has a "starter kill" system. When the alarm is actived, the starter kill is engages, and won't let the starter get voltage from the ignition switch. First thing I'd try is connecting the car's battery while the ignition key is turned to the "on/run" position. Cycle the alarm to arm, then disarm, so that the LED is not blinking. It also may require using the manual override button/switch (with the key on) to reset the alarm. Should start after that.

If all else fails, reconnecting the starter wires back together (they are spliced and running through the alarm via a SPDT relay.

The alarm isnt working... car wont start, buttons wont work!

Just a possibility, but a discharged battery could be the culprit. Do the headlights come on brightly? Will the horn blow normally? A 'dead' battery will usually have enough power to illuminate LED warning lights, while not having enough current to operate the starter/door solenoids, etc. Have somebody test the battery voltage to be sure.
