I HAVE LOST MY POLDER THM-360 MANUAL. I CAN'T SEEM TO CHANGE THE TEMPERATURE. I PUSH THE +/- AND IT DOES NOT CHANGE. WHAT AM I DOING WRONG?

Nearly (maybe all) small appliances with a heating element are equipped with a thermal fuse. This prevents the meltdown of heating elements, most of which are encased in aluminum. These fuses are not only unreliable (China is the biggest supplier) but generally unavailable as replacement parts since they are most often spot-welded to the ends of the heating element and would have to be replaced in the same way since solder melts at a much lower temperature.
I would suggest you replace the pot.

It would seem that you have a problem with the power supplying the magnetron. In other words the internal temperature is not changing quickly enough.
It would be wrong to estimate a repair cost as I cannot tell if it needs more parts or less.

The convection heater is control according to the temperature of the part n 3014 Thermister
Part Number: AP2025611 made by GE

So this is acting like a temperature sensor and it seem that is giving wrong indication to the control panel and switch off the heater at wrong temperature.

So you should replace the thermister.

Sounds like the thermostadt is simply shutting off at the wrong temperature.
That is most likely located in the controle section of the cooker where you select the features and cooking temperature. Those thermostats can be off pretty easily.
The are sombined metalic items that change resistance at varying rates with temperature. Not uncommon.
That would have to be replaced. No way to adjust one.
