Water has no air bubbles (insulation) so is able to freeze quicker than ice cream,which is full of air,although icecream,if left too long in the freezer WILL freeze solid.

Does not seem too freeze icecream mix despite letting it mix for over 20mins

usually that means that you are not using enough salt in the ice mixture. salt lowers the temp by melting the ice quicker. get some ice cream salt at the grocery store and use about 20% salt 80% ice.

Icecream is a tough call. Some brands have to many artaficial ingredients and that doesnt get solid. What temps are you getting in the freezer? Is everything else frozen solid?

Ice cream is soupy & when I freeze it it becomes icy

Freeze the bowl for at least 24 hrs, rather than the 12 hrs the manual suggests - it will make all the difference in the world. For really thick ice cream, freeze the bowl for a day, and then put the ingredients in the freezer until the outer rim becomes frozen. Very delicious!
