Can I use the Phono audio connection (only RCA connection unused) on my old school Technics SA-GX290 receiver in order to connect to an audio extractor so that I can have stereo sound on my new Roku ?

No you can't. The phono connection will have a built in pre-amp which amplifies the signal from Magnetic Cartridges. If you connect anything else to it, it will either damage the pre-amp or distort the signal of your device.
It's possible to get an audio switching box that can be connected to say a tape audio in jacks and safely connect it that way.

How can I find a free owners manual for Technics S-EX110?

the user manual is here http://www2.panasonic.com/consumer-electronics/support/Audio/Technics-Audio-DJ/Technics-Receivers/model.SA-EX110 but that is for the SA-EX110 - not the S-ex110 - i assume a typo - unless you did mean s-ex110

Need a manual for Technics Receiver SA-160

Go and google it as you can buy it on line ... how tough can it be the hook up speaker wires? The small speakers are front and back, left and right in pairs. red wire to red jack on back , black wire to black jack. big speaker goes to sub wolf. jack in back. Now get those wires and play your Christmas music. note jacks may be marked fr fl rr rl sub
