Yeah that happened to me as well. You could try deleting the actual app and reinstalling it, you don't have to create a new account for that or you could not use it for a few hours and then when you go on it again it may work. The waiting worked for me.

Recheck the exchange/mail server properites and confirm they are correct. Also, check and see if it is set to Cached Exchange mode.

In Office 2007, select Tools > Accounts Settings. Then make sure the correct email account is selected and select Change while the Email tab is selected.
