First of all, congrats, you are using one of the best printer on the market.
For HP Officejet 6310 :-
To set the date and time
1. Press Setup.
2. Press 6, and then press 3.
This selects Tools and then selects Date and Time.
3. Enter the month, day, and year by pressing the appropriate numbers on the
keypad. Depending on your country/region setting, you might enter the date in a
different order.
4. Enter the hours and minutes.
5. If your time is displayed in the 12-hour format, press 1 for AM, or 2 for PM.
The new date and time settings appear on the display.

Press on the Setup button on printer front panel
Use arrow key till you find TOOLS - Press OK
User arrow key till you find Set Date and Time - Press OK

This way you can setup date and time on your printer.

I need to change the name on outgoing faxes from my HP 6310 Officejet, but cannot find the information in the owner's manual. Can you help?

This "Fax header" information can be changed on the OfficeJet 6310 control panel:

1) Press the <Setup> button
2) Press 4, then press 1
3) Enter your personal or company name
4) Enter your fax number

You may have to use the numeric keypad to enter letters. The number of presses of the key changes the letter.

The 6310 takes a #95 tri-color cartridge. #901 is for Officejet 4500 and 4600 series printers.

Setting the time

On my 6310 all in one printer ------> Hit "Setup" key (with the question mark next to it >> Select Tools (menu item 6) with OK button >> Date and Time (menu item 3) with OK button.
Then set the date and time using the keypad on the printer and the ok button. Either the arrow keys or the setup button move through the various menu options.
