This is caused by a failing coil on the gas valve. You should replace the gas valve.

Fryer cut off but pilot stays on

You could have a weak pilot or thermopile. If the thermopile is not heated correctly by the pilot, it cannot generate enough millivolts to open the gas valve. The same is true if the thermopile is faulty. Thermopiles consist of several junctions of which only some may go bad causing low millivolt output. Millivolt output with the thermostat off and pilot lit should be around 600 millivolt, you can check with a DC multimeter set on MV across the two wires coming from the thermopile. Remember, the thermopile has to be heated by the pilot thoroughly before you will get the full millivolt reading and the thermostat must be off. Cleaning the pilot assembly is often helpful, thermopiles are inexpensive and relatively easy to change. Of course, other problems can cause this issue as well, but the above are most common.

I start the pilot up... burners go on but once it reaches temperature the burners shut off and dont start up again????/ what could be the proble

Hi there.
Check the thermostat, it may have a mechanical defect (not closing contacts once it reaches the cut-in temperature).
If the pilot flame goes out with the burner flame once the ste temp is reached, your fryer may have problem with the hi-limit (premature tripping).
Regards.

Gas fire wont stay lit

The thermostat probably reached the set temp, but maybe the pilot lite blew out. Or the control needs to be replaced.

WHEN FRYER HEATS UP THEN IS LOADED TEMP SEEMS TO FALL AND HAS TO BE RESET

If you manually reset by pressing overtemp thermostat, then check your operating thermostat.. maybe over heating.. if so replace thermostat.. if pilot cuts out completely prematurely without reaching set temp then replace overtemp cut out thermostat as it is faulty.

Fryer wont lite when temp knob is turned up to 350 range pilot is lit

Observe the thermostat when set to higher temp, you should hear a clicking sound as the mechanical contacts inside closes, at this point, burners should fire up.
Thermostat can be tested by checking the continuity across its terminals (using an ohm meter) when set to a temperature higher than the oil temperature.
Also, the thermopile must be free of soot or any form of dirt and the pilot must have good flame quality, gas pressure should meet the nameplate's requirement.

Fryer does not shut off when temp .is reached

I assume it is a gas model. There are 2 thermostats. One is adjustable, you set your temp, it sounds like it has gone bad.. The second thermostat is the high limit thermostat. When it reaches 450 degrees F, it will shut down the pilot and main flame to prevent a grease fire. It may be possible that someone has hooked the thermostat up wrong. Next time you fire it up, disconnect one of the thermostat wires that has the temperature knob. If the flame goes out, the thermostat is bad,

My freezer's defrost systems runs constantly

i dont think so i would look at the compressor kicking out on thermal overload or a faulty thermostat thermostats have two settings cut in cut out your cut in could be bad and not turning the compressor on till the temp reaches melting temps now if your hearing a click buzz then you need to look at the compressor and make sure the compressor fan is running but its not a defrost promblem

Main burner will not light or goes out before grease reaches temperature.

before replacing any parts, clean out the pilot, burner orfices and burners.if this doesnt solve your problem replace the thermopile.call 18884hobart and get the parts dept.tell them you need a thermopile for the model of your fryer.95% of the time the t-pile goes bad.theres also the hilimit in the unit that kills the gas if the fryer gets too hot but i dont think thats the problem.also check all wiring connections to the gas valve (clean and free of grease).drain the oil in the tank and youll see 2 bulbs ones the thermostat bulb the others the hilimit bulb.make sure their secured to the bracket.
