I suggest a headset. Avaya has a great headset selector tool at: http://www.avaya.com/gcm/master-usa/en-us/headsets/wizard.htm

Just pick your phone model and options you want and it will drill down until you have a list of suitable headsets.

Let me suggest, for your environment, a corded headset, over-the-head with two earpieces, and noise cancelling. Either of the three models here: http://www.avaya.com/gcm/master-usa/en-us/headsets/filter.htm&Filter=DeviceType:headset;PhoneModelName:Partner%2012B;HeadsetConnection:Corded;HeadsetStyle:Over-the-Head_esc_comma_%20Two%20Earpieces;AudioOption:Noise%20Cancelling would be great.

You may also need an amplifier to use certain corded headsets, the Avaya website will let you know.
