I have kitchenaid superba ice machine, that makes ice, but the ice melts as soon as it has been cut into cubes. will not save the ice. MODEL KU1S15NRHB6
Your problem is slow production. this unit does not refrigerate the ice. the bin is but an insulated storage device so the ice is constantly melting away. the output should be somewhere around 50 lbs in 24 hours which is more than the capacity of the bin so it should fill up and shut down on a full bin within that period. unless of course it is on your back deck facing west in july! these machines are very finicky. many different things will affect production make sure you do the system clean trip at least every 6 months more often if you use alot of ice. also check the condensor coil every 90 days and vac it off if dusty. it is located at the front of the machine behind that panel at the bottom 4 1/4 inch cap screws to remove it it is tricky to get off and on because of the lower hinge but you can do it. many other things can slow down production.
If it's makes a good slab of ice the only reason it would melt would be a drain blockage holding water in the bottom of the unit or the water pan overflowing into the bin when it fills up. If you check the slab when it falls on the cutter and see a hollow looking spot in the middle you may have an evapoator leak. Yhis would require a service tech to repair.

if you are talking about the bucket the cubes go into, most likely you do not use a lot of ice. the ice isn't melting, it's evaporating. usually winds up in a big clump at the bottom.
Turn the t'stat up to 9. You want to save the meat and ice cream. It sounds like you may be losing freon. Get it looked at soon so you won't come home and find meat soft and ice milk.
It may just need a cleaning. Use approved cleaner for this modle and sanitize the bin after the cleaning. If it is making some ice, most likely there is not an issue with the charge.
sounds like your defrost termination switch is not cuttin off heater when ice on evap melts.switch is surpose to cut off heater when it reaches a certain temp. replace defrost termination switch
Remove the cover where the persons finger is and check to make sure that it is not covered with ice. Sounds like your machine iced oup and you will need to clean the coils and possibly replace the thermostat

remove front cover to view control panel. there is a cube size adjustment there. use a small screwdriver and turn it counterclockwise to make the cubes smaller
hoshizakis make ice cubes depending on the amount of water in the sump. if you are starving for water the sump only partially fills in the fill time allowed . then it makes ice until the water is used up and the float switch drops and the cubes are little slices. you can adjust the size of cubes you want by raising or lowering the float assembley in the sump. if its to low the water rises and the float rises and tells the machine you happy with little slices. if you raise it up to max height you can max fill before float satisfies and max ice cubes. But if you are starving for water the time to fill will run out before the sump fills and cubes will be small no matter where you set the floats assembly. water starving can be due to crud in the water line, to small a water line, most hoshizes take a half inch line ,or a clogged water filter. if you suspect a filter take it out . if fill is drastically improved you need a new filter. be aware that starving for water on a hoshizaki will eventually lead to broken evap plates. big time expensive.good luck. i put in a new machine ruined by starving water and the new one made little chips of ice real quick. i finally pulled the filter out and voila! big cubes and great production.
