Is it doing more than lighting the pilot light? Or is the only action is the pilot light coming on, then off?

I would need to know more spacifically which model you had. Here is a list of manuals on the manufacturers web site so you can see for yourself.

http://www.pitco.com/doc_lib.htm

If I were to look at your unit, I would first look for, and see if there is a sensor (sometimes appears to resemble a piece of coat hanger sticking through some ceramic) that the flames will heat. The warming from the flames generates electricity. The electricity keeps the gas flowing. It is a safety device to keep your home/business from exploding from a build-up of unburnt gas.

Make sure the sensor is being hit by the flame. If it is, and the flame still goes out, then it just might be bad. I would imagine it would run about $20 for a replacement part.

if it works, great! If not, then you are only out $20.

Burner problem

Hi there!
Check the incoming gas pressure.
Insufficient gas pressure will greatly affect the unit's efficiency.
Regards.

Seems like it shuts off when its gets to a certane temp have to relight pilot

Check if the oil temp does not reach 450F because if it does, it will trip the high limit device that will shut off the burner flame as well as the pilot flame. But if high limit device trips off prematurely (at temperature less than 450F) you have to replace it. Just make sure that its sensing bulb does not touch the fire tube.

I have a pitco 35c fryer the pilot light will light but the flame is very low it goes out when i release the controll the pilot light adjustment has no effect on flame i have the right amount of fuel...

Check and clean the thermopile, it is the cylindrical piece of metal standing behind the pilot assembly.Try also to tighten its wiring connections to the gas valve and high limit. If it does not correct the problem, replace the thermopile.

My pitco frialator fryer's pilate wont stay lit

Check the thermopile, it should be free of soot or any form of dirt. Pilot flame quality must be good. Gas pressure should meet the requirement as stated on the nameplate.
