I like to season my smoker before actually cooking in them. Here is how I would treat yours. I would wipe down all the grills and inside the cooking area with a vegetable oil. You can do this with a bottle of oil and a rag or do what what many do and just spray the whole inside down with PAM. Once this is done I would light the burner and bring the temperature up about as high as it will go for about 10 minutes and then turn it off. Once the heat is gone down to a point it is safe to touch, re-spray the insides. It should be ready to cook. Re-spray grills before each use.

soak some hickory/ oak / mesquite chips any one of these will do, soak them in water for a couple of hours then put them in the pan and turn it on this will burn out any coating on the metal and flavor the grill for smoking leave it on for a good 2-3 hrs on med then on high mke sure you keep the chips replenished

Is it wise to wash the grates with soap and water or does this remove the seasoning and create a need to reseason? Should the grates be washed?

Hi gscollinssr...
Never wash the grill grates with soap and water...your right it will remove the seasoning and have to be reseasoned again..Clean with a wire brush and wipe with a dry paper towel to clean your grates for the next time you cook.

How many hours do you you season the smoker initially before putting food items in it? do you put water in the pan for the initial smoke? and how many hours will it take to smoke a turkey?

It takes three hours on medium setting to season the smoker. During the last 3/4 hour of seasoning, add 1 cup of wood chips to the wood chip box. Let the chips soak in water for a half hour prior to using them. Once three hours is up, turn off, unplug and let the unit cool off.

Will not heat

You have a faulty wire or bad heating element, I will bet that it is a wire broken or burned apart. Open the unit and check the wiring from the case to the element and check if it is not severed or burned apart.
