If the machine is heating the element is working.

If it looks like bread dough then the paddle is mixing.

It's more than likely your ingredients. Old flour, old yeast, not enough flour, not enough yeast, water too hot or cold.

Check each ingredient to the recip as you put it in. Put them in in the order suggested by the recipe. The yeast should go in last and shouldn't have contact with the water until mixing starts.

My Cuisinart bread machine has stopped baking the bread, it goes through the 3 hour cycle but at the end the dough is risen but not baked. What is wrong and how can I fix it?

If your Cuisinart bread machine is not baking the bread properly, there could be a few potential causes for the issue. Here are some troubleshooting steps you can try to identify and resolve the problem:
1. Check the Bread Pan: Ensure that the bread pan is properly inserted into the machine and securely locked in place. Make sure it is centered and seated correctly.
2. Check the Kneading Paddle: Verify that the kneading paddle is properly installed in the bread pan. It should be securely attached to the spindle at the bottom of the bread pan.
3. Use Fresh Ingredients: Ensure that you are using fresh and high-quality ingredients, including flour, yeast, and other additives. Old or expired ingredients can affect the bread's rising and baking process.
4. Verify Yeast Activation: Make sure that the yeast you are using is active and not expired. Test the yeast by dissolving it in warm water with a small amount of sugar. If it doesn't become foamy and bubbly within a few minutes, the yeast may be inactive, and you should replace it.
5. Check the Program Settings: Confirm that you have selected the correct program for the type of bread you are making. Different programs have different settings for kneading, rising, and baking. Make sure you are using the appropriate program for your recipe.
6. Monitor the Dough: Throughout the kneading and rising process, observe the dough to ensure it is properly formed and rising. If the dough seems too dry or too wet, adjust the recipe accordingly by adding small amounts of flour or water.
7. Inspect the Heating Element: If the bread machine completes the cycle but the bread is not baked, there may be an issue with the heating element. Inspect the heating element for any signs of damage or malfunction. If it appears faulty, it may need to be replaced. In such cases, contacting Cuisinart customer support or a qualified technician for further assistance is recommended.
By following these steps, you should be able to identify and resolve common issues that may prevent your Cuisinart bread machine from properly baking the bread.

Mixing OK but not heating/baking

That's not a good sign. This will keep your bread from rising properly and baking, obviously.
If you are still under warranty, contact your manufacturer, otherwise, you can still use the machine to mix but you will need to use your oven to finish your bread.
If your bread is not rising in the machine:
  • Remove mxing chamber from machine
  • If the chamber is not removable, UN-PLUG THE BREAD MACHINE so the blades DO NOT TURN.
  • Be careful of the mixing blade in the chamber
  • Remove dough gently with slightly oiled hands into a lightly oiled bowl with room for about 2x the volume of the dough
  • Cover with plastic wrap to prevent the dough from drying
  • Place the bowl of dough in an unheated oven and leave the oven OFF
  • Place an empty lasagna pan in the cold oven on a shelf below the dough or on the floor of the oven if there are no exposed elements
  • Boil some water and pour it carefully into the lasagna pan
  • Close the oven door - You have just made a proofing box. The steam and heat from the boiled water is sufficient to make a great proofing cabinet out of your oven hot box
  • Allow the dough to rise to about twice the original volume
  • remove the dough from the oven and remove the pan of water
  • continue with the baking instructions below
If your bread is rising in the machine or you have finished the above instructions:
  • Remove dough gently with slightly oiled hands into bread pans. Breadmakers are different sizes so you may need to use one or two pans. Or make an artisan style loaf on a cookie sheet lined with parchment.
  • Be careful not to compress your risen dough as this will make the loaves dense
  • You may also choose to make buns by separating the dough into smaller balls and placing on parchment lined cookie sheets
  • You can allow the dough to rise again for a short time in the proofing box above but I would just leave them on the counter under clean towels to prevent drying for say another 20 minutes. Over-rising bread should also be prevented. The result will be 'deflated' looking bread.
  • Preheat your oven to 375F and bake the bread until it is golden and makes a hollow sound when thumped on the top or the bottom crust
Personally, I love that a machine will mix and knead my dough for me while i go do something else but I don't like the appearance of a machine baked bread. I like the artisan hand-made look. I recommend you keep the breadmaker until you find one you like that is drastically reduced in price and just use the artisan proofing & baking options above.
If you have a Pizza Stone, you can also try that for baking an artisan bread. Use the breadmaker as the workhorse, use your oven as an artist.
Good Luck and may the Yeast be Lively!

The bread doesn't rise properly, it sort of sinks in the middle. This is the same recipe we've used for years successfully. Could the machine just be broken?

Is this the same machine you have been using all this time? Or, is this an old recipe that worked in your previous machine but doesn't work in your Cuisinart? If you have moved from one location such as Florida to Colorado, elevation changes like that can make a difference in bread rising properly. If nothing has changed and now your bread doesn't rise properly then try using 1 tablespoon less liquid. If that doesn't work try 2 tablespoons less liquid and 1/2 teaspoon extra yeast.

Keeading blades

I had the same problem. I find the loaves to be a much better size if I just use program setting 8 - Dough then put the dough in 2 regular bread pans or on cookie sheets (bagetts), let them have a second rising and finish them in the convection oven at 350 F for 21 minutes.

Frequently the bread does not rise correctly when doing "fast" mode.Should the unit be heating during the rise cycle?

Bread not rising correctly is complicated since there are so many factors involved more than just proofing temperature. You should hear a short click once in a while as it cycles the heater on for just a second at a time. You won't notice any considerable heat since too much heat will kill the yeast. Bread not rising correctly is normally due to the gluten not being developed in the bread or the flour was poor quality without much gluten to begin with. You can try adding some "Vital Wheat Gluten" to each batch to help and at the same time adjusting the yeast up by a half teaspoon at a time. Also keep in mind that the salt you add to the dough will ****** the yeast. Try and limit the salt to a teaspoon per loaf. Too little salt and the taste of the bread will go bland on you. Another aid to rising is to add some Diastatic Malt Powder to assit in the rise. And lastly, remember that you whole wheat flour will never rise as high as white flour.

Bread Machine B2300

this is the second rise period. it is ok, and at this time if you like, you can gently move the dough aside, and remove the paddles. Just remember to put a little oil on the exposed stem. This way, you can have bread without the huge holes from the paddles.

Rising cycle

Have you 'proofed' your yeast? The rise temperature is not very much above room temp, particularly in the summer months. I would expect the bread to rise at least 3/4 as much without any rise time heating.
