If you are using Excel 2007 ...Open Excel ... Click the Office button ... select Open ... highlight the file you wish to open ... then at the bottom of the dialog box click the downarrow next to Open and choose "Open-Read Only".

Before opening your old document(s), right-click the file ... select properties ... place a check mark in the box Read-only ... Select OK. Your application should open the file in Read-Only mode and will not be able to make changes or save the file.
I remember learning how to do this through my course so am sure there is a way to turn off the auto update of the date. As I now don't have office 07 and none of the books on it could help me, have researched the poblem on the net for u.

It sounds like you have created your documents using a template. In many Word templates there is a DATE field that is designed to poll the computer system and apply the current date into that field.
What you need to do is change the DATE field to a CREATEDATE field to preserve the date you actually created the document on.
Just press Alt+F9 to display the field code and change DATE (or TIME) to CREATEDATE, then Alt+F9 to toggle back and then F9 to update
