Calibration I have a similiar late model Viking Professional gas range with electric oven. Problem - oven is 100 degrees higher than set temperature. I called gas & electric company and they came out this AM. Said we can't calibrate the electric oven - only gas. How do I calibrate my electric oven??

Electric ovens are calibrated behind the temp knob. Pull the knob straight off of the shaft and look at the back of the knob. There should be a metal slide with a scale and a little set screw. Loosen the screw and move the slide in the direction indicated for your needs.

Why doesn't it heat to set temperature?

Hello. In most ovens with an electronic control, the temperature is regulated by 2 things--the sensor and the oven control board. The sensor is simply an electrically resistive device that changes resistance as the temperature increases or decreases. It is connected to the main control board by 2 wires(just a "pigtail") and the main board is supposed to be calibrated to adjust properly. Most control boards have a built-in program by which you can adjust the calibration +/- 35 degrees. If your oven is outside that range, and you're sure that the sensor is good, the connections are good, etc., then the oven control board temp control circuit has gone bad. Keep in mind, when you turn on an electronically controlled oven, the first time it heats up is USUALLY hotter by about 50 degrees--this allows the floor, walls, and ceiling to reach proper temperature. This is called the initial spike. In gas ovens, the user must wait approximately 8-10 minutes AFTER the oven beeps to cook anything. In an exposed-element electric oven, the user waits approximately 10-15 minutes after the beep. In the hidden bake element models, waiting 20-25 minutes after the beep is normal!
Also, keep in mind, ovens can have 60 degree temp swings higher and lower(as long as the midpoint is close to the chosen temp) I hope I've helped you!

We have a 2-year old Viking gas range (model VGCC5304BCC) and lately the oven temperature has beeen running about 25-40 degrees higher than the selected temperature. I cannot find a way to calibrate or...

use a digital thermometer with a probe inside the cavity, normal preheat is 30 mins to 350, wait until the 3rd cycle to see what temps are in the cycle, record high , low temps add and divide. plus or minus 10 are in scope. ex 350 on at 340 off at 360 will avg 350. depending on the serial and age, there is no calibration unless your Electronic thermostat would be suspect. Not familiar with the brand of course but if your model has an Eaton oven control like this one for Viking Page 23 their is an adjustment screw for calibrating the oven temps. Other controls use an adjustment inside the shaft of the oven control itself.

You can have the oven recalibrated by a professional OR you can purchase an oven thermometer and check the temperature yourself. Place the oven thermometer in the oven.Set the oven to a specific temperature. When it indicates it is at that temperature check the thermometer. Adjust your setting by that many degrees. For instance, if you set the temp at 350 and the oven thermometer shows 450, then reduce your temperature setting by 100 degrees each time you use the oven.

I need to calibrate an electric oven

Probably. There is often a key sequence that will enable a calibration mode. We need the full model number to find the tech info, or you can probably find it in the tech sheet which is normally taped on behind the control panel.

It takes too long for the oven to reach the desired temperature.

Here are two instances of when food "bakes poorly:"

  • When the item takes far too long to finish, you probably have a weak bake igniter. Often, you need to replace the igniter, but you may want to troubleshoot the oven's electrical system further to more precisely locate the defect.

  • When the temperature is consistent but too high or too low, the oven thermostat or sensor is either mis-calibrated or defective. If your oven uses an electronic temperature-regulating device, you may have an electric sensor in the oven instead of a mechanical thermostat. If the oven temperature is off by 30 to 40 degrees in this type of unit, you must replace the sensor.

    On many units with a mechanical thermostat, you can remove the thermostat knob and adjust the knob itself to more accurately represent the actual setting of the thermostat. If, when you remove the knob, there's a screw on the back of it with a small calibration plate, you can loosen the screw, adjust the plate, then tighten the screw again. If the knob isn't adjustable, and the oven temperature is off by more than 30 to 40 degrees, you need to replace the thermostat to solve the problem.

Viking DED0530TSS oven calibration?

With a small screw driver and a steady hand. Set the knob to the temp u want then pull knob off. Inside the stem there is a little screw. Try and regulate it slowly also allow it enough time to reach the desired temp. Good luck.
