Deep fryer heats up to 550 and shuts down pilot and everytime and it wont let me heat to the temp im wanting it to but however if i shut it down myself it stays lit

What temp do you want it to run at? If you are trying to go hotter than 550 that is not safe and I do not recommend it.

The thermocouple is bad or the pilot light is not adjusted to heat the thermocouple to the point where the safety shut off stays on.

CHECK THE SMALL SOLINOID THAT FEED THE PILOT IF THAT OPENES EVERYTIME THE FRYER STARTES THERES YOUR PROBLEM REPLACE IT AND ALL SHOULD BE WELL

Pitco Fryer will not light up

Check the thermopile, it must be free of dirt or soot so that it can absorb enough heat from pilot flame and in turn can generate the right amount of voltage to energize pilot and burner coils.
Check also the gas pressure, it should be of standard as required on the unit's nameplate.

It heats to 550 no matter wat

Replace the thermostat. If it's really getting to 550F without shutting off the pilot and main burner, or the electric in an electric fryer, by tripping the high limit, replace the high limit as well. The high limit should shut off all the gas or electric at about 425F.

I put it on any temp and it heats to 550 degrees

Replace the thermostat, P5047588. If the fryer is not shutting off, both main burner and pilot, when it overheats, also replace the high limit PP10084. The high limit usually shuts the fryer off at about 425-450F. Check your thermometer. A fryer should never get up to 550F.

Yes it is. If you are trying to get the fryer that hot it is doing it's job as it is not safe to operate the fryer at that temp.

It shuts down because it is tripping the high limit. Apply a soap solution to the lines going from the gas valve to the thermostat. If bubbles appear there is a leak and needs to be corrected. If no bubbles appear then the thermostat is probably your problem.

Pilot goes out when fryer reaches set temp. and shuts-off.

try to change the thermal battery the device that the pilot heats.. other wise there is a screw at the botton of the automatic valve.. try to increase the pilot so it can heat more the thermal battery! u dont have enough voltage to activate the solenoid valve so thats why ur pilot goes off
