My HP photosmart 3210 skips lines on the black ink only. The other colors print fine.

(The obvious) Replace the black cartridge. Even if ot says you have ink you could have a faulty cartridge, even if it has worked fine in the past. (The not so obvious) Clean your printheads/nozzles. Repeat the process a few times.

HP Photosmart 3310 All-in-One Printer - I opened the ink cartridge door & it now seems locked in open position - won't close.

Your printer does have a lock that clicks in when you open the printer to replace ink catridges. The User Manual has no specific comment on steps required to release the lock.

Is there a release tab/button that you grip when lifting? If so, suggest you try pressing this same release as you lift the cover, lifting slightly higher to see if the lock will disengage allowing you to close.

If no release tab/button simply try lifting slightly higher as above to see if the lock will disengage.

If either of these does not resolve isse I would inspect losely to see if there is a way to disengage the lock; simply using more force may result in damage.

HP Photsmart 3210 Printer - Cartridge Access Door is locked in open position. Is there a realease?

Unplug unit first.
Is the print cartridge docked at the far right? If not, move it from side to side to check for paper jams. Most likely there is an obstruction that will not allow it to travel freely. Once cleared, close the cover and reattach the power cord. Power up and see what happens.

Color ink cartridges not working. I tried cleaning the printer heads many times and also followed pineworks' suggestions. Still doesn't work. I even put in some new ink cartridges. Only the black cartridge...

turn printer off. take all ink cartridges out. look at where the ink is dispensing to see if the tape is still on the cartridge of blocking the ink from coming out, if so remove. when touching the area where the ink comes out, be very careful.
look into the printer where the ink dispenses into the printer, look and see if anything is blocking the hole.

My HP Photosmart 3210 printer is not printing black color

must be dryed ink on ink cartdrige, or dirty print-head (ink cartdrige) conntector.
try these :
To clean the print head from the control panel
1. Load letter or A4 unused plain white paper into the main tray.
2. Press Setup.
3. Press 5, then press 2.
This displays the Tools menu and then selects Clean Printhead.
or
To clean the ink cartridge contacts
1. Unplug the power cord from the back of the HP All-in-One.
2. Lift the ink cartridge access door.
3. Squeeze the tab below an ink cartridge to release the latch inside the HP All-in-One, and then lift the latch.
4. Inspect the ink cartridge contacts for ink and debris buildup.
5. Dip a clean foam rubber swab or lint-free cloth into distilled water, and squeeze any excess water from it.
6. Clean only the copper-colored contacts.
7. Place the ink cartridge back into the empty slot and press down on the gray latch until it clicks into place.
8. Repeat if necessary for the other ink cartridges.
9. Gently close the ink cartridge access door and plug the power cord into the back of the HP All-in-One.

My HP Photosmart 3210xi cartridge door is also locked in open

There's no sensor, it's just a spring and a plastic wedge thing.

Using a #10 torx driver, remove two screws holding the right-hand side panel from the printer. (one in the back, one on top underneath the ink access door.) Unsnap it and set it aside.

Disconnect 3 small ribbon cables and one 5-pin connector that lead from the printer to the access door/scanner.

Remove the lid from the flatbed, then remove the access door from it's hinges. Use the torx driver and unscrew the hinges from the main scanner body.

Lift the hinge assembly from the scanner and push the steel pin out, seperating the two parts of the hinge.

From there you should be able to loosen them up, remove the springs, lubricate them, or find whatever the problem is.

Reassemble and you're done.

My HP Photosmart 3210 thinks the ink cartridge is still empty even though I have replaced it.

Very simple cartridge. Check the chip on the bottom to be sure that nothing is on the contacts. Try installing the old cart and see what happens. Fortunately, these are not very expensive. Install the old one, unless you ran it until it locked the printer out.
