I have an old washing machine that only does Warm Wash, Cold Rinse. Can I just turn off the faucet for the hot water to in a way "force" it to wash cold?
You will need to put a "Y" in the cold water line and remove the hot water hose otherwise the hot water solenoid will open up and let in hot water,if you have cold water to both solenoids then you can get done what you want to accomplish,wash and rinse in cold water on all cycles

Rinse on most washers is cold water your wash cycles can be cold hot and even warm. Problem You may have is a bad water feed valve Or Timer and possible bad wire harness at motor to timer
check water valve Turn washer to regular wash cycle pull knob on will washer fill ?
if water starts to fill then change washer temp if washer has this.
if water comes out on all settings water valve is fine.
Check the water both hot and cold that it is turned on;at faucet.
Your Kenmore Most likely has a bad water valve check for hot water side clog or not working.
Hot wash, hot rinse is for 'whites'. Cold wash, cold rinse is for 'colors'. Warm wash, cold or warm rinse is for 'permanent press'. Check your settings to see if you have these options. Double check the hoses, put the machine on cold fill and feel the hoses. Has someone worked on the machine and possibly put the wires on the solenoids wrong? Easy mistake to make.
If you pull the power to the machine and water continues to flow then the water inlet valve is stuck open. You will need to replace the water inlet valve.The Service manual will step you thru the process. FAV6800A/FAV9800A Service Manual for reference.Sears Parts Direct for reference. The water inlet valve is p/n 25001046 Substitution: 12002242 Water valve shop around for best price. Is this Cold water inlet valve issue? If so and you only do Cold water wash/rinse like me you could switch the fill hose connections from hot to cold to hot at the faucet. Turn the hot water faucet valve off and select Warm/Warm temp selection and you will be filling with cold water wash/rinse.Maybe that would hold you over until you replace the Water Inlet Valve assembly. You can check out your pressure switch transitions as I had this poster do for his issue at this link http://www.fixya.com/support/t5471295-washer_fills_water_begins_agitate_but His issue seems to be a definite stuck pressure switch not water inlet valve such as yours.Check to make sure your pressure switch is OK by watching the fill point transitions as I mention in the post. If you machine is a series 12 or above the Low and Mid fill pressure switch transitions will toggle at the same time.Series 12 and above us a 2 level pressure switch.Series 10 and 1 use a 3 level pressure switch. Be sure the hot water valve is all the way opened first. Both faucets must have equal pressure for washer to work properly. They all rinse with cold water, this is normal.
It sounds like you have the hot and cold water lines to the washer reversed.
Try turning off the tap for the hot water then setting the washer to just cold wash and then hot washif you get nothing on the cold and cold water when set to hot they are probably reversed. Typically if the auto-temp control is broken you will only get hot or cold coming out on any setting.
If you have washer set for a warm rinse and the cold water inlet screen is restricted you will get too much hot water. Another thing I have seen is if another near by faucet has a sprayer on it and the sprayer is off, but the hot and cold valves supplying the sprayer are on, the hot water can feed back through that faucet and give you an increased rinse water temp in your washer. Also, make sure hot and cold hoses are attached to the proper side of the inlet valve.
