You need to remove splash shield, tilt mixer back,with a long screwdriver adj. the set screwclockwise to decrease clearance for beater to bowl clearance,always use b beater when making adj. clearance should be .054" to .115".also make sure there are no deformities in btm of bowl which can cause you problems.dont forget to vote

    Do you need to loosen the big lock-nut first? It is located just below the setscrew when the mixer is on its back. I am not sure what tool I need to loosen the nut if I need to. I have a picture of it I can share if helpful. I could not post it here, so would have to email it.

    My A200 does not tip back. It has a bowl lift, and the nut at the bottom of the lift rod controls bowl position.

    You have to remove the base to get at this nut.

The locking portion on the stand may be loose, misaligned, or wearing out. Or the bottom of the bowl needs attention.
It shopuld never move when mixing.

When raised to do whipping my professional 550 hd mixer attachment does not scrap the bowl to mix properly

You can adjust the mixer bowl up and down slightly. If you lower your bowl and look at the back you will see a little screw, it looks like a flat head screw and it is on the "neck" of the mixer.
You can raise and lower the bowl by adjusting this cam screw. You can tell that your bowl is adjust correctly by attaching the flat beater and put a dime in the bottom of the bowl, the beater should just barely touch the dime and move it around the bottom of the bowl.

The beater will not scrape the sides of the bowl, if you are wanting the sides of the bowl scraped I would recommend the Flex Edge Beater made by KitchenAid which is basically a flat beater with a rubberized edge which will scrape the side of the bowl as it rotates.

Mixer blade is chipping

If it is a tilt head mixer then adjust the screw which can be seen by tipping the head back and looking into the pivot point. Turn the screw CCW to raise the head and prevent the paddle from hitting the bottom of the bowl.

If it is a lift bowl mixer there is an adjusting screw on the frame of the stand behind the bowl holder mechanism. It rurns a cam which adjusts the height of the mixer.

Professional 600 - makes loud noise when mixing,often stops as it blends 8 cups of bread flour and "needs a break", flat beater seems to get caught on bottom of bowl - this mixer is 1 yr. old!!

Several things:

The Professional 600 has a metal gear housing with a metal gearing. Because of this, the Professional 600 will generally run louder than other stand mixers that may have a nylon/metal mesh gearing.

How long is the bread dough being mixed for? Kitchenaid stand mixers must be used on speed 2 for bread doughs, using the spiral shaped dough hook, and mixing for no longer than 7 minutes.

If the flat beater is getting caught on the bottom of the bowl, pleasure assure the bowl is being seated correctly. You will place the bowl on the mixer arms on the left and right hand side. You will also want to take your fingers along the back of the bowl, where it butts up against the base of the mixer, and press downward. You will hear an audible click as the bowl falls into a spring latch and allows the bowl to sit flush and secure. If this is not being done, the flat beater may strike the bottom of the bowl.

If this was not the cause of the problem, please consult your Use and Care Guide about the beater to bowl adjustment. This is an easy adjustment made with a flat head screwdriver that can quickly correct the problem of a flat beater hitting the bottom of the bowl.

You have killed it by overloading the bowl. Hobart recomends no more than 65% bowl capacity on doughs & 75% on batters or icings. Replace the motor or the whole unit

Dry clumps in pizza dough

Hi. You should consider a few things. They type of hook you use, can greatly affect your end result. If you're making a yeasted dough with a high protein percentage 12-13%, you should be using an "ED" hook, this is a spiral hook that has a sharp turn at the tip. You can find them on eBay for a competitive price. I believe that Hobart also sells them, but for a higher price. They are very good for mixing pizza type doughs, they also do an excellent job kneading the dough.

Have you checked the flour for lumps before it goes into the mixer? Have you tried sifting the flour?
Are you adding all the liquid and flour at once? If so try adding flour in stages to all the liquid. If you find that this solution helps you, please rate it. Good luck! ricardok45

Hobart a200 mixer won't mix

The bowl holds 20 quarts--are you overloading the mix?This mixer is not made for medium/heavy pizza dough.Depending on the pounds of dough,water and other ingredients will affect the mixer in some way.
