What weight oil do I use for a 5000 watt Coleman generator

Depends on the temperature where yuo will operate it, but a good multi-viscosity oil like 10W-30 should work. 5W-30 for cold climates.

Fresh Fuel
Clean carburetor if stored with fuel in the tank and wasn't shut off
Clean fuel filter
Clean air filter
Proper oil level
Clean spark plug (just replace it, it is easier and faster)

Coleman Powermate 6250 generator - shut off generator at 11pm after v4 hours normal use. At 5am, wouldn't start, pull rope wouldn't move to start. A few hours later while draining oil found mostly gas...

the usual reason is a stuck float in your carburator , can be caused by dirt/rust etc , remove carb bowl and clean , there is also a very small needle valve which is attached to this float ( metering needle ) these can leak.
if all else fails always turn off the fuel supply to the generator whilst not in use
