The fan is likely for convection cooking. And it sounds like you might be used to cooking on convection mode. Try changing it.

A lot of ovens have a convection option, and the fan will only work in this position. Otherwise, just rotate your pan halfway through, like we always did.

What causes a duke E101 convection oven to not cook evenly?

If it's getting hot, but it isn't cooking as fast as normal, your convection blower/fan may be out. If you can hear the fan running, but the oven isn't getting hot enough, then you most likely have a heat element or thermostat problem.
Fan and blower problems tend to be a bit more common with convection ovens.

I have an hygena classic built in oven. The turbo cooking option heats up slightly and the fan works but doesn't get to temperature. The grill and convection oven work fine. Any ideas. The oven is about...

The problem is usually down to the thermostat - sometimes it can be moved and end up touching the grill and burning out - other than that they just wear out after time with the heat.

The fan runs to circulate the heat inside the oven for more even and faster cooking...That is how a convection oven works :)

Uneven rising & baking in convection oven

I repair commercial cooking equipment for a living. When a customer complains about uneven cooking the #1 thing that these manufacturers ask is..... are they turning (180*) the baking sheets half way thru the cook cycle. #2 are they staggering the pans front to back & side to side. It's kind of a pain but, works for the commercial ones.

Dacor single convection oven will not turn on.

Turn your breaker off and back on. If you only have half voltage everything but the elemnets can come on.

This is an electric convection oven

I am by no means an expert, but I believe the only thing differenty in a convection oven vs a regular oven is that there is a fan to conduct the heat quicker and more evenly. It has to do with heat tranfer rate. I can't imagine why aluminum foil would cause any problem.
