Yes, you can pair your iPhone with any bluetooth headset. I have used many different Plantronics headsets and all have worked perfectly.
On the iPhone, go to Settings (the gears icon), click GENERAL, then Bluetooth and make sure it's switched to "On". Then, follow the pairing instructions that come with the headset.

Tips & Warnings
The LED light on your headset must be solid blue to pair to your iPhone. A flashing light indicates your headset is not yet in pairing mode and your iPhone will not be able to connect to the headset.
Having your iPhone 4 Bluetooth turned on will drain your phone battery faster than normal.
Hi, the iPhone 3G definitely does work with bluetooth. In fact, I'm talking on a bluetooth headset with my iPhone 3G right now.
You have to put both your Southern Telecom Emerson Bluetooth Headsetand the iPhone in "pairing mode".
On your iPhone, click the Menu button, tap the Settings icon, tap the General icon, and then tap the Bluetooth icon. Make sure that 'Bluetooth' is set to "ON" and not "OFF". As long as you have this screen up, your iPhone is in pairing mode.
Turn your Southern Telecom Emerson Bluetooth Headset off and wait a few seconds. On your Southern Telecom Emerson Bluetooth Headset, press and hold and Answer/End button for Five Seconds, until a solid blue light comes on, which places the device in Bluetooth discoverable mode.
Now that both devices are 'discoverable', the Southern Telecom Emerson Bluetooth Headset will show up on that Bluetooth screen on your iPhone. Be patient as it might take a minute to appear. Tap on the Southern Telecom Emerson Bluetooth Headsetin the list on your iPhone, and then it will ask you for a passkey. The passkey is "0000" (without the quotes). After you enter the passkey, the Southern Telecom Emerson Bluetooth Headset will show up on the list with the word "Paired" next to it.
Now you're paired! Incoming calls will automatically be passed to your headset as long as your iPhone can find it nearby.
First open the blueooth setting on the iphone start the bluetooth service(turn on) on the iphone. Power on the bluetooth headset. search devices in iphone, wait till it finishes searching, until you see the name of your bluetooth headset. the headset would blink two or three time(could be more depending on the brand) then at the iphone screen a pop out will come asking for the passcode or passkey. The passkey default would be always 0000 or 00000, you should see your product manual or documentation of your specific bluetooth headset if you are not sure on the passcode. If connection is a success. the headset would blink and the iphone woould veify and lists it to itself. Now you have a working bluetooth headset.
1.From the main home screen of the iphone open "SETTINGS".
2.From the setting menu go to "GENERAL".
3.From General go to "BLUETOOTH".
4.In the Bluetooth menu you will see an on/off switch. Make sure you turn the switch to "ON".
5.From here you want to go to your bluetooth headset. Hold the on button for about 5-10 seconds until the light starts blinking. Once light is blinking go back to iphone.
6.In the Bluetooth menu (same as step 4) your iphone should have discovered your bluetooth headset. However if it is not paired yet. Open the headset menu.
7.In the headset menu you are required to enter the appropriate PIN number (which should be given inside your bluetooth headset instruction manual).
8.After you have entered the correct PIN number press connect.
9.From here your Bluetooth Headset should be connected and ready to use.
NOTE:Fully charge your bluetooth headset before syncing it to your iphone
Make sure the bluetooth headset and the iPhone are both in pairing mode. Set the headset in pairing mode first and once set then go and turn on the iPhonebluetooth. It may take about 30 seconds to a minute for it to find the headset. Once the iPhone has found the headset make sure you select it on the phone and it will pair from there - Hope this Helps!!
Try this link. It solved my issue www.scribd.com/doc/280088/motorola-h500-bluetooth-earpiece-manual. Basically what you need to do is power the earpiece off. Make sure that your IPhone is not currently attempting to discover bluetooth devices (i.e. Bluetooth is OFF). Hold the On button on your earpiece (it has the symbol of a phone on it) for 6-10 seconds. The light on the earpiece remains lit. Now your earpiece is in discovery mode. On your IPhone, go to Settings, General, Bluetooth. Turn Bluetooth ON. Now your phone and your earpiece are both in discovery mode. When you see "Headset" listed, select it and enter the password "0000". Your IPhone is now paired with your H500 headset.
