When you switch the ps3 on if you hold down the power button for more than 4 seconds it runs the display setup. and sets the ps3 to run in the best possible option

When you have PS3 connected to the TV with HDMI connector, hold the ps3 power button down for 5 seconds, when u hear 2 beeps, release it and it should display standard format on the TV, thats when you'll get the option to correct the picture mode for the PS3. Hope that helps.
Except for the scrambling and freezing, it sounds like an issue I had recently with my own system. Give this a try and please leave a comment on weather it worked or not.

Sounds like from what your describing, a horizontal sync problem and there are a few capacitors in this model that does cause that. If your not a tech this is something you should mess with as the way to trouble shoot this problem would be by using a scjhemetic, a isolation transformer and an ocilliscope. its a possiblity that you could also have a tune rproblem thats giving the sync separator circuit a weak sync pulse from the video its putting out.
