I am unable to switch to the YC outputs on the AG-MX70. The V output is working for both of the outputs, but if I unplug into the V and plug into S video (YC) nothing comes out. I can only find the settings for the input.

There are many aftermarket black box products that convert composite video and audio to USB. That is what you will need. Check with computer parts site for Composite to USB and RCA audio to USB and you should find the items you need.
It appears that the composite video in/out is not working. I didn't have a TV with an S-video to test with. Since there were only two video devices for input, I routed their composite video output to an a/b switch. Works great, and sounds great.......
AG-DS555s are plagued by capacitor failure problems on all the video boards in the deck. Replacement of all surface mount electrolytic capacitors is the solution, but before you try that, give the heads a good cleaning. It's amazing what a miniscule amount of dirt on the heads will do.
