What you have is an ignition problem get this corrected before you experience a delayed ignition, the hot surface ignitor pulls enough amps 3-3.4 to power up and open the gas valve but ignition did not take place reason you smell gas don't know how old unit is ignitor may be weak good on draws 3-3.5 amps burner ports may be dirty or the bracket that the ignitor mounts too may have bowed away from the burner
On any gas appliance there is a high and a low limit temp stat which could be indipendant or on the gas valve it's self, that is faulty.
When the oven reaches temp, it cuts out. sounds like faulty over heat stat.
If this is the design that the oven will click to light they generally will preheat but shut down once they go to standard bake. The oven will try three times to relight but then shuts down and will not try to light again until you reset the oven. If this is the case the oven burner itself is usually the problem. the burner comes with the electrode.

The main control or oven switch may have failed. You will need to
identify the wires from the switch/control that lead to the igniter that
is clicking. These wires may pass through the spark module and change
colors. Refer to the wiring diagram or tech sheet. If you have power
leaving the switch/ control when in the off position replace the switch
/control. Manual switches can be tested with an ohmeter.
Spark Module / Igniter Module
If your oven igniter keeps clicking the igniter module or spark module
is the likely problem. First be sure the igniter is clean and the
surrounding contact points are clean. Make sure power is off when
cleaning. If the oven keeps clicking after it's cleaned and the oven
switch / control checks good replace the spark module.
Always preheat your oven and let it cycle at least 2 times. Your unit may show 350 but the manufactures know that it is not 350. When it registers preheated, it really means that it is at an acceptable temperature to start cooking. If you think that it may not be calibrated correctly, your owner's manual will have instructions on how to recalibrate your oven. You will be able to raise or lower the temperature by + 25 degrees or - 25 degrees. As far as the gas smell, you will from time to time smell a gas smell with a gas oven especially if you are right at it when it ignites. If you are smelling gas when it is not in use then you should be extremely concerned.
