Hobart C44A dishwasher. Ventilation not working?

Hobart dishwasher C44A, the room continues to fill up with steam which didn't before. I have a double vent hood on the dishwasher. Is there something connected or take part in blowing the steam out the vents that could be malfunctioning?

Yes the extraction fan has failed.

Testimonial: "Thanks, now before the fan stopped working the workers said the lights flickered and sparks flew from the dishwasher and that's when the fan stopped. I have never heard that before, do you know what could've caused that?"

Water and electricity don't mix. A Service Engineer will find where the short occurred. It could also be a wire rubbed through and shorting to earth due to vibration and constant use. In all the places I have worked, the dishwashers never stop. My position just before I retired was at the Air Canada business class lounge. In the times I had to wash up due to staff deficiencies, as soon as the machine stopped with one load, the next was ready to go in. We were open 5:30 am to 11:30 pm. The life of a washing machine is brutal!

Rinse temp not high enough on hobart c44a dishwasher

If your water temp. gauge (on piping) is showing 180 but the digital display is only reading 125 deg. then I would remove the water temp sensor from the rinse piping on back upper part of machine (It is a small probe with wires coming out of it). Clean probe with emery cloth and put it back in to see if that changes the display. If it doesn't then you may need to replace the probe.

Strong gas fumes when burner is on to bring up wash temp just had burner replaced

there are only two reasons that this would happen.
1. The burners are not adjusted correctly for optimal performance and they are running rich. Could be a gas pressure issue causing this or the orifice and fuel air adjustment needs checked.
2. The ventilation is not adequate.
You need to measure the CO level if this is not vented to the outside. If it is then you need to make sure the flu is adequate and there are in temp inversion issues or room air causing backflow etc.

Simply determine what is not working, diagnose the problem, make correction or replace defective part and test operation. This is the best answer possible as there is no information as to what is wrong with the machine in your post.
