They aren't supposed to get hot. A dehydrator blows ambient cool air across the food to dry it. Heat would cause food borne pathogens to grow causing food poisoning. Wow, this one does. As a Food Safety Trainer, I find this very worrying!

The Nesco website has Owner's Manual Download's for their products. However, the FD-27 Model is not listed. So, I called their Customer Service Department and they said that the FD-35 series is comparable to the FD-27 model.
