Can I use 2 black cartridges instead of 1x colour And 1x black

no point
the machine is programmed to use each colour as required
putting in black cartridges will still only use the one black cartridge
remember that grey is not less black but black with a colour mix

What to do if my water is mixing with the oil

What oil is it mixing with. If it is engine oil then have a compression test done to determine head gasket/cracked head. Water ( grey/white colour oil)can also get to the sump from corrosion holes in the timing cover case behind the water pump impellor. If it is oil in the radiator and is pink ,then it will be from a failed oil cooler in the radiator for the transmission allowing transmission oil to get to the coolant.

Why cannon ip3000 can't print in only black and white although I choose grey scale priting?

Not sure of the QUESTION..? Do you want to print colour or black and
white..? Anyway, try this, bring up image , at top left click on Fix , at top
right click on Auto Adjust then go down to Adjust Colour click on and
hold Saturation Slider move to left to remove colour ,right to add colour
go to print and it should give you a black / white image. Remember to
return image back to original colour or image will return to file in b/w
hope this works for you..goodluck...T.C.

Black colour ?

Thats because it's using the other colours to mix what it thinks to be shades of grey. Due to the black ink being pigment based and the colours inks dye base, when printing onto glossy paper the machine will use the colour dye based inks to make up black.
If you were to print on plain paper, set to greyscale, then the machine will just use the black as the pigment ink sits onto of the plain paper and will not run should the paper get wet.  With glossy paper the ink has to be absorbed into the paper ad the Black pigment ink will not do this so the machine will use the coloured inks.

Sucks but true.
