The manual day/night switch can be made from the operator ext (usually 101). This will over-ride the preset schedule.
Press:
[SHFT], [FEAT], scroll jog dial until you see Night Mode, [SEL], then press [0] for night or [1] for day.
To change the automatic start and stop time is, indeed, a phone guy (or gal) function.
Page 4-33 in the System programming manual.

go to EXT 100 and program a key with a code 560.
you will do that by pressing the menu or F1 key and then fallow the steps for programming a key.
once you have programmed the key press it once and the display will start changing from night to day to holiday, pick the day and you are done.
Better yet, go to the phone that has on the display word NGT/night, or DAY, HLDAY and press the each key until the display changes that word on the display. one of the keys is programmed with key code 560. the phones that do not show Day, Night and Holiday will not have the key.

I think this is fixable by customer level programming. You're going to turn off the Automatic Time Switching (101) and make sure the sytsem is in night mode by pushing the INFO button.
From the main console, press PROG **1234 and dial 101 for system program. Press SEL and ENTER and EXIT as this changes Auto Switching to MANUAL. Now, if the system is in nights, as it should be, you don't have to do anything else until you get back. If it isn't, dial *7801 on the intercom to force it into night mode and you're done!

If your zumo 400 or 500 series will not power on, or performs strangely after powering up, follow the steps (described on the Garmin website) below to perform a soft reset:
The
zumo will now power on. Because the battery may deplete while the zumo
is locked up, it is ideal to leave the zumo connected to power to allow
it time to charge.

This has about 5 different conditions, so let me start somewhere.
Pretending your 7731 is connected to a recent Panasonic KSU, like a TA series, you have the ability to set the time by hand, or CID delivered in the first call after 2 or 3 AM will do it. If the sender is still on standard time (typical with VoIP delivered CID), then it will reset the clock to a different time (-1 hour) every day and it will be noticed if you set the clock and the first call of the day follows.
In addition, via programming from the main phone, you can set manual or automatic switching for day, night, and lunch modes. That procedure is outlined in the Programming Manual for your system, but it involves setting the clock times in Maintenance console 1.4 or programs 006 and 007.
If you absolutely want to never have to deal with clocks or night mode, then set 006 to manual and dial 781# on the intercom from the main phone (x101).
Note that this is only the solution for TA series KSU's.
