SOURCE: wrong language on garmin oregon 400t
I called Garmin for this very same reason. The answer is; while your GPS is off place your index finger in the upper left of the screen, turn on the GPS, a screen will come up and ask if you want to clear the GPS (or something to that effect), say yes. (Yes is the top button) Then you can choose english. YAY!

First ..try a Hard reset ..to get to the factory defaults of the device ...and see if this will work for you ...
To do so ...follow :
Turn off Garmin device. Press down on bottom right corner of the
touchscreen, and then power on the GPS unit. You should be prompted
whether do you really want to erase all user data, or asked if do you
really want to start up in maintenance mode. Press "Yes" to reset
(warning: all data will be erased and lost, so backup before proceeding)
or enter maintenance mode.
this will erase user data ..and so ..but will reset it ..and it may start again ..
If not..maybe when you updated..you skipped some files or something ..and now you will have to do another trick ..and in this case..I found something ..:
1. Power off the unit.
2. HOLD down the power button and you will see "Pre Boot Mode" appear on
the lower part of the display. KEEP HOLDING the power button down and
the display will flicker, do this until the pre boot mode message
disappears. This seems to take a long time (60 seconds at least).
3. Once the pre-boot mode message disappears release the power button
and your device will perform some activities to recover from the above
problem.
