Question about Maytag Kitchen Ranges
Holding the clock button for 3 seconds as manual says does nothing, nor does holding it any longer than that.
Try flipping off the breaker at the breaker box for about 10 minutes and see if it will reset itself. If you continue to have problems with it, just give us a call and we will troubleshoot this problem for you.

This is from the Maytag website it explains how to cancel the sabbath mode;
To cancel the Sabbath Mode:
Press the Clock pad for three seconds.
After 72 hours, the Sabbath Mode will end.
