My H700 works great when there is a quite background, as did the Samsung device it replaces. When there is any background noise, my voice is amplified and gets very distorted to the point where the person I am talking to can not understand me. Anybody know if this is normal or do I have a defective unit?

Try to contact the vendor for genuine headphones, is your cell phone have bluetooth connection? if any just use bluetooth that have universal connector. so you could use any headphones you want.. hopefully it works..
On mine, if I wait for it to be fully connected with the phone, then press the button one time, the blackberry ask for the correct voice command. However, if I press the button twice, it will dial the last number called.
