My pitco fryer, we used fry out, we are still getting black flacks in the water from the equipment, what can we do?

Excellent reason to use Dormont flex lines.
If water gets to your combination valve (the thing with the on-off knob,) it should be replaced. Can you hear gas hissing? If there is gas at the orifice, it should light. check to see that all of the air is purged. Can you smell gas?

If this is a milivolt unit, meaning no solid-state or computer/digital controlled. You would need to turn your gas valve to the pilot position, then press in and hold until you can light the pilot using a lighter (this may take several minutes, to bleed the air from gas supply) once there is a pilot flame present, you will need to hold the valve button in for about 45 seconds to heat the thermalpile. Once pilot is lit, thene turn to on position and proceeed to turning thermostate to set temp.

CFG error on controller board can be cleared by resetting the controller back to factory setting and by doing this, all program added after the factory setting will be erased so you have to reprogram them again.

Fryer troubleshooting

Hi there,
Fryer's Digital Controller will display "BOIL" if the temperature is it reading does not exceed 212F or 100C for quite some time. Make sure that there is enough level of oil (not water) in the Fry Pot before turning it on.

Can i disconect the hi limit switch and still use fryer

Hi there.
Hi limit switch/ device on fryers acts as safety device. It cuts gas supply on burners when it is triggered by high oil temperature in case the temperature regulating device failed to avoid further damage on equipment, property or life.
It is not advisable to operate the equipment with bypassed hi limit device.
I suggest to have it replaced first before putting the fryer back in operation.

Pitco 45C- fryer lights and burns aprox. 5 to 8 minutes, then flame and pilot go out. However it will relight without having to reset anything. This info is coming from the owner and I have not seen the...

I assume that the fryer has auto ignition feature. Try to check if the hi limit sensing bulb (located inside the fry tank) is not touching the fire tube, it must have at least 3 millimeter clearance with respect to the fire tube otherwise, high temperature will be sensed that will trip (@ 450F) its mechanical contact which will in turn shut the burner operation and will reset once it is cooled down.
The same with the manual ignition fryers.

What are most common problems found with pitco frialator fryers?

Some of the most common problems with Pitco fryers is failed Hi-Limit thermostats, carbon build up on burner tubes, and dirty or clogged burners. This hi-limit thermostat is mounted inside the fry tank on one of the burners. Often the cappillary tubes are damaged or broken during cleaning causing the limit to fail. The hi-limit is the most common part I replace on Pitco fryers. The other common items are self explanitory. Keep the fryer clean in all areas, including burners and tubes. You will see the repair man less often.

You need to identify where the leak is coming.
If the leak is on the fry tank, best way to address it is to replace the oil tank.

When placng seafood in fryer at work a foam quickly forms and rises to the top of the fryer. What's causing this and how can I change this?

The seafood contains water, the water reacts with the oil and causes the bubbling.

Try placing the seafood onto some absorbent paper for a few minutes before adding it to the fryer.

Or try dunking it in to seal it for a few seconds before you fry it off

How to change a thermostat on a pitco fryer

First off make sure you get the OEM pitco t-stat.
1. Unplug all power sources from the fryer.
2. Remove all oil or shortening from the fry pot.
3.Remove the sensing bulb from the brackets inside the fry pot.
4.There will be a double compression fitting entering the fry pot from inside the control area, remove both of these compression fittings.
5. Slide the sensing bulb and cap tube out of the opening in the fry pot.
6. Remove the mounting hardware holding the old t-stat to the cabinet
7.Disconnect the wires on the backside of the t-stat (Make sure to note the wire locations)
8.Connect the wires to the new t-stat.
9Repeat the order in reverse to reinstall the new t-stat
When you connect the larger compression fitting to the frypot make sure that you get a pipe sealant that is rated to 600 deg. F
any high heat pipe sealant for stainless steel should suffice for this.
