The easiest way is to get a translation dictionary for whatever language it is currently in and find the word for SETTINGS and LANGUAGE. Then change it back to English.

what make/model is the vehicle? most in car monitors have a setup menu with language options that should be accessible from the remote control or front panel. if you can get into the setup menu look for an icon that has a person speaking or multiple lines of text in various languages, select it and you should have an english setting under it if the monitor's controller is equipped with the english language data.

Some units are only in Japanese because they are specifically for the Japanese home market. There is a trick. Get a smartphone with the Google Translate App on it and use the camera feature to translate what is seen on screen. Look for Settings / Language.
