My breville bread maker is not cooking bread properly. It rises but when cooking is finished it sinks with a big dent in the top. Any suggestions why?

SOURCE: Bread Rises Beautifully - then sinks in middle during bake cycle

Sinking in the middle means that there was too much rising for the amount of structure in the bread.
Usual causes:
-too much yeast (reduce 1/2 tsp.)
-too much sugar (reduce 1/2 tsp.)
-not enough salt (increase 1/4 tsp.)
-too much water (reduce 1 tbsp)
Another possible remedy: use "best for bread" flour, it has more gluten, or add gluten separately, 1 tbsp.

Start with reducing amount of water.

SOURCE: Bread does not rise

Bread with a sunken top is likely to be a problem with the Panasonic Bread Machine. This is probably the result of too much fluid and some overactive yeast. First try a bit less fluid. If this does not work, a bit less heat, and a bit more salt should inhibit the yeast. Good luck.

Why does bread deflate?

See if the paddle shaft in the bottom of the pan is frozen. If it is, free it up manually. Then get it good and dry and oil it with cooking oil. After that, every time you bake, put the oil for the recipe in first and turn the paddle until it moves freely. Once the oil is in the bearing, it will keep the water out and the machine will move properly. I have gotten away with this fix for hundreds of loaves.

The bread doesn't rise properly, it sort of sinks in the middle. This is the same recipe we've used for years successfully. Could the machine just be broken?

Is this the same machine you have been using all this time? Or, is this an old recipe that worked in your previous machine but doesn't work in your Cuisinart? If you have moved from one location such as Florida to Colorado, elevation changes like that can make a difference in bread rising properly. If nothing has changed and now your bread doesn't rise properly then try using 1 tablespoon less liquid. If that doesn't work try 2 tablespoons less liquid and 1/2 teaspoon extra yeast.

The bread is not cooked in the center

If your loaf is also dense then you may not be getting the proper rise. Be sure you are using bread flour and not all purpose flour.

B&D B2300 - when the bread finishes baking, I end up with it collapsed in at the top so I get a big crater in the finished product. I have been using part whole wheat, part white flour. Why is it...

Your machine is too warm while the dough rises. No adjustment possible. You can add a bit of Gluten to your bread or buy flour for bread making instead of general purpose flour. Most white flour has gluten reduced during processing.

Julie Childs book, "the way to cook" has a nice write up on gluten in European flour vs. the general purpose flour we commonly buy in the US.

I have the model B2300 and made the Family Favourite White Sandwich Loaf - followed recipe exactly (with overnight delay) and it all stuck to the top of the bread maker - had to cut off the top part -...

Hi,
Add the wet ingredients first... then the flour...then put the yeast on top of the flour so it does not touch the wet and start proofing and rising. Seems it rose most of the night. Use instant yeast so you don't have to proof it. Just an idea :)

The bread only rises about half way.

After its mixed the ingredients and before it cooks, it should sit for a while to allow the mix to rise. Check that the heater is on in this period, otherwise, if its cold, it wont rise
