I have a star deep fryer that over heats the oil and then trips the breaker on the back of the fryer.

Has to be a stuck thermostat or a bent or broken bulb, tube in the fryer oil. When replacing the control be careful not to bend the tube to much to pinch it closed. This is a very small pipe. Check by turning the thermostat from low to high and see if it will turn off the fryer. It could be out of calibration but unlikly when the high limit kicks off.

The unit is on but does not heat up. it was working then it stopped.how do i check to see if its the thermostat or the hi limit switch

Disconnect first the unit from power source, Locate the terminals of the hi limit and thermostat then remove either one of the wire connected to it. Using an ohm meter, check for the continuity across the terminals. If the hi limit has continuity across its terminals, it is good. Thermostat will have continuity across its terminals when set to a higher temperature, you will also hear a clicking sound when its mechanical contacts engage.

Fryer quits heating have to hit reset switch

This button should be a high limit switch. If it is a small red button mounted to a 2" x 2" or so device. You most likley have an issue with the thermostat letting it over heat. The best thing to do would be to replace both the thermostat and the high limit for safety reasons.

Star deep fat fryer model #EM14

You should determine how many amps the unit is pulling, you will need an ammeter to do this. Continuity through the internal circuit breaker does not determine the current being pulled by fryer only that it can pull current. If the fryer is pulling more than 50 amps the problem will be in the fryer, if it is less than 50 and the breaker trips you could have a faulty breaker.
