When Making yogurt the start temperature is critical.
you have to get the temperature to the correct temperature to start the culture.
in step three it states . Let the milk cool to 110-115°F.

or 43 Celsius to 46 Celsius this temperature is critical so you must have a thermometer.

My yogurt maker recipe book is missing. I don't know how to make yogurt.

I have a Donvier Yogurt Maker with no direction manuel also. I gave up trying to find a manuel for this machine. I found directions for a Salton which I think would be the same.

Making yogurt with the Salton Yogurt Maker is fun, easy and worry-free. A few things you'll need are milk, powdered milk for thickening, a thermometer and a yogurt starter. Be sure your yogurt maker is clean before starting. It will provide a stable temperature for incubating the yogurt. In this article you will find the best instructions for Salton Yogurt Maker.
1. Add ½ cup of dry milk powder to 1 qt of whole or skim milk.
The milk should be heated on the stove to 185-190°F, stirring frequently.
2. While you're waiting for the milk to heat, plug in your yogurt maker so it can be warming up.
3. Let the milk cool to 110-115°F. I usually place the pot in a large bowl of ice water, stirring the milk until it's cooled to the right temperature.
4. Pour about 1/3 of the milk into a separate clean container and add ½ cup of plain yogurt with active cultures or 1 pack of yogurt starter. Stir until mixed evenly.
5. Pour this starter mix into the remaining milk and stir.
6. Finally, pour the milk into your pre-heated yogurt maker.
7. You should allow the yogurt to incubate 6-12 hours. The longer it is heated, the more tart the taste.
8. When the batch is done, put the container in the frigerator and allow it to cool for several hours or overnight. The yogurt will thicken as it cools.
Now you have a wonderfully delicious batch of plain yogurt. If you like it flavored, add some maple syrup, honey, fruit or jam.
Homemade yogurt is a healthy alternative to store-bought brands. You have control over the ingredients and there's no risk of eating unhealthy additives and sugars. Basic Yogurt Recipe
4 cups (1 quart) milk - whole, 2 %, 1% or skim
1/4 - 1/2 cup instant non-fat dry milk powder
1/2 cup plain yogurt (with live cultures) or yogurt from a previous batch
  1. In a saucepan, combine milk and dry milk and heat over medium heat, stirring frequently to just below the boiling point. Remove the milk from heat and allow to cool until lukewarm (about 100 degrees). To cool the milk quickly, place the saucepan into the refrigerator or a sink of cold water, stirring occasionally to cool evenly. This takes about 20 minutes.

  2. Pre-warm the yogurt maker's heating base by plugging the cord into an electrical outlet. The signal light will glow when base is plugged in.

  3. Add plain yogurt to the warm milk, stirring gently to blend. Do not beat or whip. Pour the mixture into the yogurt container, secure the lid and place the covered container into the heating base. Cover the Yogurt Maker and process undisturbed and out of drafts for 4-10 hours, depending on tartness desired. Yogurt should be partially set after processing and will thicken further after refrigeration.

  4. After processing, unplug the cord from the outlet. Remove the cover and lift the covered yogurt container out of the heating base. Place the container in the refrigerator and chill at least two hours to thicken. If desired, remove 1/2 cup of the yogurt to use as a starter for future batches, before adding any fruit or flavoring. Keep yogurt refrigerated until use.
