Dear Debbie,
You have not indicated to us where you live, and that might have something to do with this answer.
In the United States, at least in all the many states I have been in, there are two pipes coming into the top of what you are calling a boiler, we call a water heater.
( It is NOT supposed to boil the water!)
One of those pipes, the one that allows the heated water to flow away from the heater, has a shut off immediately outside the tank. See if yours does.
You should be able to tell which is which by feeling the temperature of the pipe.

You turn off the mains water valve (usually under kitchen sink) so no more water enters the property. Then you run all the taps to drain the system. When you've finished just turn the mains back on. Or if you have a modern bathroom most water inlets / pipes to the taps have their own isolator value so you just need to turn that off.

there are two main faults with combi boilers not giving hot water. one is a faulty flow sensor, the other is the most common which is a blocked heat exchanger caused by debris and scale in the system. this needs to be flushed out or may require a new heat exchanger depending on the age and condition of the boiler some plumbers may suggest a new boiler.

most likely the diverter valve.. when hot tap turned on the movement of the water through the valve operates a diaphragm which pushes a pin/button//switch to tell the boiler to fire up

How to remove airlock from hot water system

At the boiler should be a purge setup. This consists of a valve to shut the zone off, and downstream of that valve is a drain ****. Attach a hose to the drain ****, and with the boiler running, close the valve and open the drain ****. (Turn the heat up on one zone at a time if you have multiple zones.) You should be able to notice when the air comes out of the hose by hearing it and the hose twitches and jumps when large amounts of air come out. After the air stops coming out, open the valve , close the drain, flip the bypass closed, and let the water circulate, then reapeat procedure. Do this until you hear or see no more air. You can run a long hose outside or you can use a bucket and a short hose. Using the bucket allows you to actually see the bubbles of air, but you will be dumping many buckets before you are done. Most boiler feed valves have a fast fill lever that bypasses the slow 12 psi that the boiler is normally fed at. Using this will speed up the purge considerably, but don't forget to flip the lever back down between, and after purging or the boiler relief valve will blow off and make a mess. Good luck!

Boilers are inherently dangerous for the average DIY for so many reasons, contact British Gas and have them come back and fix it, tell them it was fine before the "service". They may simply have a control valve shut off.

clicking rads are due to pipe expansion when getting hot.
If the hot water [secondary circuit] gets hot and the boiler stays on [does not keep going on and off] even with a constant low water flow then the diverter should be ok.
there is a valve to prevent the primary circuit [central heating] [ CH] from sending water to the rads. this or its control may be at fault.
